Mämmi - A traditional Easter pudding from Finland

Mämmi is a traditional Finnish Easter time dessert made from rye flour and malt. It is often said that mämmi divides people into the lovers and haters, just like Marmite. Ambassador Pekka Huhtaniemi and his wife Liisa are big fans of this sludgy-looking pudding, and as an early Easter surprise, our Embassy chef Sini Kiialainen decided to make some for them.

Sini Kiialainen

Ingredients:

1000ml of water
500 ml of Guinness beer
100 g of wheat bran
375g of rye flour
100 ml of molasses
50 ml of black treacle 
100 ml of barley malt extract syrup
2-3 drops of Pure Orange Oil
1 teaspoon of salt







Plus 50 ml of syrup & water mixture to put on top of the mämmi before baking in the oven.

Method 

  1. Bring water, Guinness, molasses, black treacle and barley malt extract syrup to boil.
  2. Whisk in the wheat bran, rye flour, pure orange oil and salt. If you want to ensure smooth mämmi, run wheat bran and rye flour in a food processor before cooking.
  3. Cook the mixture in medium heat for 5-10 minutes, whisking constantly.
  4. Take the mixture off the heat and let it cool down for few minutes.
  5. Fill 2/3 of a large oven dish with the mixture. Do not fill the dish to the top because mämmi will rise during baking. Before baking, pour the syrup and water mixture on top of the mämmi. This is to lessen the skin that will form on top.
  6. Bake in the oven (125° Celsius) for 2,5–3 hours.
  7. Leave to chill in the fridge for overnight.

Serve with double cream and sugar, and enjoy!

This recipe is for 10-15 servings. Mämmi keeps for 5-6 days in the fridge and can also be frozen.
