​Aishwarya Rai Bachchan’s favourite dish​

Aishwarya Rai Bachchan is a choosy eater, but, when it comes to homemade food, she is always game. Here’s one of her favourites Mangalorean Chicken Curry that one can try at home.

​Ingredients required​

1 kg chicken, 1/2 tsp turmeric powder, 1/2 tsp salt, 2 tbsp ghee, 2 onions, 3/4 cup coconut, 1 piece tamarind, 1 tsp fresh turmeric, 1 tbsp coriander seeds, 1 tsp peppercorn, 1/2 tsp fenugreek seeds, 1 tsp cumin seeds, 1 pod garlic, 6 Gundu dry red chilli, 5 Kashmiri dry red chilli, 1 cup water, 3/4 cup coconut milk, salt to taste, 1 sprig curry leaves, and 2 tbsp coriander leaves.

​Step 1​

Marinate the chicken with turmeric powder and salt and let it rest for 20 minutes.

​Step 2​

In a pan, heat ghee and saute onion, coconut, tamarind, and turmeric for 4-6 minutes.

In another pan, dry roast coriander, pepper, fenugreek, cumin, garlic, and both types of chillies.

Allow them to cool down and then blend into a smooth paste with 1 cup of water, and the sautéed ingredients.

​Step 5​

In a pot, boil the spice paste along with the coconut milk for 15-20 minutes.

Add marinated chicken to it, adjust the salt, and top with curry leaves. Cover and cook for 40–45 minutes.

Garnish with coriander leaves and serve hot with roti or rice.
