ingredients

  • 2 cups vegetable oil
  • 1 1/4 cups chickpea flour
  • 1 teaspoon baking powder
  • 2 tablespoons rice flour
  • 1 teaspoon turmeric
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 2 large onions, thinly sliced
  • salt, to taste

Method

  • Step 1

    Put the vegetable oil into a large pan and heat over medium-high heat.

  • Step 2

    While your oil heats up, make the batter. In a large bowl, add the chickpea flour, baking powder, rice flour, turmeric, chili powder, cumin, coriander, salt, and 1/2 cup water. Mix together well.

  • Step 3

    Add the sliced onion into the mix and cover until all the pieces are well coated.

  • Step 4

    When your oil is at 350°F, carefully drop the coated onions into the oil, frying in small batches. Fry each batch for 1 to 2 minutes, until they are golden brown and crispy. Remove them with a spoon and allow them to drain on a paper-covered plate. Sprinkle the fried onions with salt, and enjoy!
