Cheese and Onion Bhaji

Ingredients

  • 2 large onions, sliced length-ways, thinly
  • 3 1/2 ounces chickpea flour
  • 1 1/2 ounces rice flour
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon cumin
  • 1/4 teaspoon red chilli powder
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon salt
  • 20 curry leaves, roughly sliced
  • 2-4 green chillis, thinly sliced
  • 7 ounces cooking mozzarella
  • 6-8 tablespoons water
  • 70 3/4 fluid ounces oil for deep frying
  • serve with peanuts
  • branston pickle
  • raita

Steps

  1. Heat the oil to 355°F in a large saucepan. The oil shouldn’t come more than halfway up the sides of the pan.
  2. Cut 4 3/4 inches squares from the mozzarella and grate the rest.
