Cheese and Onion Bhaji

Ingredients
- 2 large onions, sliced length-ways, thinly
- 3 1/2 ounces chickpea flour
- 1 1/2 ounces rice flour
- 1/2 teaspoon ground coriander
- 1/2 teaspoon cumin
- 1/4 teaspoon red chilli powder
- 1/4 teaspoon turmeric
- 1/4 teaspoon ground black pepper
- 1 teaspoon salt
- 20 curry leaves, roughly sliced
- 2-4 green chillis, thinly sliced
- 7 ounces cooking mozzarella
- 6-8 tablespoons water
- 70 3/4 fluid ounces oil for deep frying
- serve with peanuts

Steps
- Heat the oil to 355°F in a large saucepan. The oil shouldn’t come more than halfway up the sides of the pan.
- Cut 4 3/4 inches squares from the mozzarella and grate the rest.
